Moses Falafel humbly began as a restored food trailer anchored in the parking lot of the Dell Jewish Community Campus. Since then, owner and Israel native Shmuel Haviv has worked his way up by letting his vegan, kosher cuisine speak for itself. As he recounted in a feature in the Jewish Outlook, his fondness for using imported spices and unique Israeli ingredients was passed down by his grandfather—the eatery's namesake—who ran his own falafel restaurant in Israel throughout the '90s.
