"Farm to table" may be a popular phrase in restaurant parlance, but at The Farm and Fisherman, there's nothing ordinary about the care chef Joshua Lawler exhibits when preparing sustainably raised meats and just-picked produce. With today's Gourmet offer, take an inside look at the chef's nose-to-tail philosophy: a butchery class, sausage-making demonstration, and a five-course meal ($140, not including gratuity). On August 5, Lawler will demonstrate how to butcher a pig, and on July 22 and August 19, he'll show students how to butcher a lamb and goat. Classes start at 1 p.m., and attendees are welcome to bring their own beer and wine.
In the chestnut-colored jewel box dining room, Lawler will begin every event with an education in butchery—a skill he learned from his grandfather. He'll then demonstrate how to transform some cuts of the animal into sausage before joining the group for a feast. Lawler, a former chef de cuisine at Blue Hill at Stone Barns, turns out ingredient-driven but artistic dishes, inspired by what's fresh that morning.
The dinners follow the themes of the respective classes—that is, the lamb- and goat-butchery class features succulent ovine and caprine meats, and the pig butchery class spotlights all manner of pork. The hog-themed menu includes a roasted sea scallop with pastrami pork jowl, carrots, and bacon vinaigrette; bacon-crusted farm egg with fresh chickpeas, chervil, and shelling beans; stuffed zucchini with garlic sausage, ricotta, and pine nuts; and pork loin baked in hay, served with sweet corn, spätzle, and pancetta. For dessert, enjoy yogurt with pink peppercorns, caramelized peaches, and hazelnuts. And to really drive home his philosophy of freshness, Lawler garnishes all dishes with a colorful scattering of herbs and flowers—if it was picked that day, it will be on your plate.
